Add 3 tbsp of olive oil to a pan, add the sliced garlic and 2 peperoncino, and slowly stir-fry over low heat until the oil is infused with the aroma.
Once the garlic aroma is sufficiently infused into the oil, remove the garlic to prevent it from burning excessively and set aside.
Add the sliced onion to the oil infused with garlic aroma and stir-fry. When the onion begins to turn translucent, add the sliced bacon and stir-fry together until golden brown.
When the bacon is cooked to your liking, add the prepared bracken and stir-fry lightly once more to combine the ingredients and oil.
Add 3 tbsp of pasta cooking water (starch water) and 10g of shiokonbu to the pan to enhance the umami and create a light sauce base.
Add 150g of pasta, which has been boiled in 1L of water with 10g of salt (1% salinity), to the sauce pan.
Shake the pan vigorously over the heat to emulsify the oil smoothly, ensuring the pasta and sauce do not separate.
Plate the finished pasta, top with the stir-fried bracken and bacon, and garnish with the remaining shiokonbu to finish.
Chop the vegetables, bracken, and bacon. Stir-fry garlic and peperoncino in oil to create aroma.
Stir-fry onion, bacon, and bracken in order in the garlic oil. Add pasta water and shiokonbu to make the sauce.
Add pasta boiled in 1% saline solution to the sauce and mix vigorously to coat the pasta with the sauce.
Cooking tips 💡
When boiling pasta, use exactly 1% salt relative to the water (10g of salt per 1L of water) to ensure the pasta itself is seasoned appropriately and harmonizes with the sauce.
After infusing the oil with garlic aroma, remove the garlic and set it aside to prevent it from burning or becoming bitter during the sauce cooking process.
Shiokonbu (salted kelp) itself is very salty, so there is no need to add extra salt.
