Recipe

Cut the pork, zucchini, onion, large green onion, and cheongyang chili pepper into large pieces.
Add 6 cups of water, the pork, onion, large green onion, cheongyang chili pepper, minced garlic, and minced ginger to a pot.
When the water comes to a boil, reduce the heat to medium-low and simmer for 15 minutes to extract the pork broth.
Add the zucchini, fermented anchovy sauce, doenjang, gochujang, gochugaru, and beef dashida, and stir well to dissolve the seasonings.
Simmer over medium heat for another 5–8 minutes until the zucchini is seasoned and the broth thickens, then finish.

Add water, pork, vegetables, garlic, and ginger to a pot and simmer for 15 minutes to make the broth.
Add the zucchini, fermented anchovy sauce, doenjang, gochujang, gochugaru, and dashida.
Simmer for another 5–8 minutes until the zucchini is cooked and the broth is rich, then finish.

Cooking tips

The pork must be added from the beginning and simmered vigorously for at least 15 minutes so that the pork fat and savory flavor deeply infuse the broth.
If zucchini is added at the start, it will become mushy, so add it only after the broth has developed to keep its shape and taste intact.
