Lightly season the surface of the striploin with less salt than you would for a regular steak.
Heat grapeseed oil, which has a high smoke point, in a pan over high heat until it reaches over 190 degrees, then sear the striploin for 2 minutes on each side to achieve medium-rare.
Rest the seared striploin on a cutting board for at least 3 minutes to allow the juices to redistribute evenly.
Boil water in a pot, add the Neoguri kelp and the dried vegetable flakes from both ramen packs, then add the noodles and boil for only 4 minutes.
While the noodles are boiling, add the Chapagetti olive oil packet to a wok and stir-fry the sliced onions over high heat until they turn brown.
Once the onions turn brown, add 2 packets of Chapagetti soup base and 0.5 packets of Neoguri soup base, stir-frying quickly over high heat with the onion moisture to create a sauce.
Cut the rested striploin into bite-sized pieces, add them to the sauce pan, and stir-fry for 1 minute to let the meat absorb the flavor.
Transfer the noodles boiled for 4 minutes into the sauce pan, adding a little noodle water whenever it seems dry, and stir-fry quickly over maximum heat for 1 minute to finish.
Sear the striploin over high heat for 2 minutes on each side to medium-rare, then rest for at least 3 minutes.
While boiling the noodles for 4 minutes, stir-fry the olive oil packet and onions in a separate pan, then add 2 Chapagetti soup packets and half a Neoguri soup packet to make the sauce.
Add the sliced meat and noodles to the sauce, adding a little noodle water as needed, and stir-fry quickly over high heat for 1 minute to finish.
Cooking tips 💡
Olive oil has a low smoke point and burns easily over high heat, so it is better to use cooking oil with a high smoke point, such as grapeseed oil, when searing meat.
Adding all of the Neoguri soup base can be too salty, so adding only half is the golden ratio.
If you cut the meat immediately after searing, the juices will flow out, so you must go through a resting process of at least 3 minutes to maintain a tender texture.
