Season the beef striploin on all sides with a pinch of salt, and thinly slice the large green onion lengthwise.
Heat a pan with oil and sear the striploin until the surface is crispy, then transfer to a plate to rest.
Add the Chapagetti seasoning oil and olive oil to the pan, then stir-fry the sliced large green onion until golden brown to make stir-fried green onion.
In a pot, bring 1.1L of water, a piece of dashima, and half a packet of Neoguri powdered soup to a boil.
To the pan with the stir-fried green onion, add 1 packet of Chapagetti soup powder, half a packet of Neoguri soup powder, and about 60ml of noodle water to create a slightly thick stir-fried seasoning sauce.
Add both types of noodles and the vegetable flake mix to the boiling water and cook for 2 minutes.
Transfer the 2-minute-cooked noodles to the pan with the seasoning sauce, add a little more noodle water, and simmer for 5 minutes until glossy and well-coated.
Slice the rested striploin into bite-sized pieces, place on top of the chapaguri, and serve with the stir-fried green onion.

Sear the striploin until crispy and let it rest; stir-fry the large green onion in oil until golden brown.
Add the soup powders and noodle water to the stir-fried green onion to make a seasoning sauce, then add the noodles cooked for 2 minutes and simmer for 5 minutes.
Top the finished chapaguri with the sliced striploin and serve.

Cooking tips

Using only half the Neoguri soup powder prevents it from becoming too salty and delivers just the right level of spiciness and umami.
Cooking the noodles for only 2 minutes, then simmering them in the seasoning sauce for 5 more minutes, allows the seasoning to deeply penetrate the noodles.
Resting the seared striploin instead of slicing it immediately keeps the juices from escaping and ensures tenderness.
