Add glutinous rice to taste and adjust the water accordingly.Wash the yeolmu thoroughly, drain, and cut into 5–6 cm lengths.Roughly blend 4 red chili peppers and 4 Korean hot chili peppers in a blender.Mix the blended peppers with 80ml fermented anchovy sauce, 3 tbsp plum extract, 3 tbsp gochugaru, 1.5 tbsp minced garlic, and 0.5 tbsp minced ginger to make the seasoning paste.Add the yeolmu to the seasoning paste and toss gently. Sprinkle with sesame seeds and sansho pepper powder to finish the geotjeori.For the gang-doenjang soup, bring 400ml water, 1 tbsp doenjang, a few dried anchovies, minced onion, tofu, and 1 Korean hot chili pepper to a boil in a pot. Add 1 tbsp perilla seed powder, 0.5 tbsp gochugaru, and 0.3 tbsp beef dashida. Finish by topping with scallions.Serve the barley rice with the yeolmu geotjeori and gang-doenjang soup on the side, and mix everything together to eat.Soak the barley and cook it into rice.
