Briefly dip the floured bananas into boiling water, then immediately remove to firmly adhere the flour to the surface.
Re-dust the removed bananas thoroughly with flour to create a firm frying crust.
Fry the prepared bananas in hot oil over high heat until golden and crisp, then drain.
In a pan, add 1 tablespoon vegetable oil and 4 tablespoons sugar, stir continuously until melted and forming a clear amber-colored syrup. Optionally mix in black sesame at this stage.
Quickly toss the fried bananas into the syrup, stirring rapidly to ensure the sugar glaze (paps) coats each piece well.
Transfer to a plate brushed lightly with sesame oil, arranging without overlapping, and let cool before serving.

Cut bananas into large pieces and coat with egg and flour.
Blanch briefly in boiling water, then re-coat with flour to form a firm layer.
Fry in hot oil until crispy.
Melt sugar and oil in a pan to make syrup, adding sesame as desired.
Quickly toss fried bananas in the syrup and transfer to an oil-brushed dish.

After tossing the bananas in the sugar syrup, briefly dip them in ice water—this causes the sugar coating to set instantly, resulting in a much crispier, glass-like texture.
