  • watermelon flesh, as needed
  • sugar, same amount as watermelon
  • lemon juice, a little
  • salt, a pinch
  • ice, as needed
  • sparkling water, as needed
  • soju (optional)
  • apple mint, a little

Recipe 🍳

  1. Blend the red flesh of the watermelon (that lacks sweetness) in a blender or cut it into very small squares.
  2. Pack the cut watermelon into a glass jar that has been sterilized with boiling water.
  3. Add the sugar, lemon juice, and a pinch of salt to the jar, and mix well until the sugar dissolves.
  4. Seal the lid and let it ferment in the refrigerator for one day to complete the watermelon syrup.
  5. To make an ade, put some watermelon syrup in a glass, add ice and sparkling water, and garnish with apple mint.
  6. To enjoy as a mojito, pour watermelon syrup, ice, soju, and sparkling water to taste, then muddle with apple mint.
  1. Cut the watermelon flesh into small pieces and pack them into a boiling-water-sterilized glass jar.
  2. Add sugar, lemon juice, and salt, then let it ferment in the refrigerator for one day to make the syrup.
  3. Mix the fermented syrup with sparkling water and ice for an ade, or add soju for a cocktail.

Cooking tips 💡

  • Adding a tiny pinch of salt when making the fruit syrup brings out the natural sweetness of the watermelon much stronger.
  • If there is moisture in the glass jar, mold can easily form. Make sure to sterilize with boiling water and dry completely before use.
