Ttukdak Hyung's Uijeongbu Budae Jjigae

A hearty Uijeongbu Budae Jjigae made with Spam, sausages, and bacon simmered in a rich, savory cream and butter sauce.

Ingredients needed 🛒3 servings

  • 2 stalks green onion
  • 1 block tofu
  • 1 can Spam
  • 5 strips bacon
  • 4-5 strips sausage
  • 1 handful oyster mushrooms
  • 1 handful enoki mushrooms
  • 1 pack ramen noodles
  • 1 slice processed cheese
  • 1 Korean chili pepper (cheongyang)
  • 500ml beef bone broth
  • 400ml water
  • 150g ground pork
  • 2 tbsp minced garlic
  • 1 tbsp doenjang (soybean paste)
  • 1 tbsp gochujang (red chili paste)
  • 2 tbsp gochugaru (red chili flakes)
  • 2 tbsp soup soy sauce
  • 1 tbsp cooking wine
  • A little black pepper
  • 1/2 tbsp beef stock powder (Dasida)
  • 1/2 onion
  • 3 tbsp kimchi
  • 2 tbsp baked beans

Recipe 🍳

  1. Mash 1/3 of a can of Spam and mix with ground pork, minced garlic, doenjang, gochujang, gochugaru, soup soy sauce, cooking wine, pepper, Dasida, and minced onion to make the seasoning paste.
  2. Form the seasoning paste into a ball, seal it, and if possible, let it ferment in the refrigerator.
  3. Prepare the green onions, tofu, remaining Spam, bacon, sausage, and kimchi.
  4. Arrange the green onions, tofu, Spam, bacon, and sausage in a pot, placing the seasoning paste and kimchi in the center.
  5. Add oyster mushrooms, beef bone broth, and water, bring to a boil, then carefully dissolve the seasoning paste.
  6. Add ramen noodles, enoki mushrooms, and baked beans and cook.
  7. Garnish with Korean chili pepper and sliced cheese according to preference to finish.

  2. Place ham, sausage, tofu, and green onions in a pot.
  3. Pour in beef bone broth and water, dissolve the seasoning, and boil.
  4. Add ramen noodles, mushrooms, and cheese to complete.

  • If it tastes bland, adjust the seasoning with soup soy sauce at the end.
