- Ground Pork: 150g
- Onion: 100g
- Minced Garlic: 2 tbsp
- Doenjang: 1 tbsp
- Gochujang: 1 tbsp
- Gochugaru: 2 tbsp
- Guk-ganjang: 2 tbsp
- Mirin: 1 tbsp
- Black Pepper: 0.2 tbsp
- Beef Dasida: 0.5 tbsp
- Tofu: 300g
- Green Onion: 150g
- Oyster Mushrooms: 75g
- Sausages: 250g
- Bacon: 80g
- Spam: 140g
- Seasoning Paste
- Minced Kimchi: 3 tbsp
- Kimchi Juice: 3 tbsp
- Enoki Mushrooms: 150g
- Cheongyang Pepper: 15g
- Beef Bone Broth: 500ml
- Water: 400ml
- Baked Beans: 2 tbsp
- Ramen Noodles (Optional)
- Sliced Cheese (Optional)
- What are the two ingredients that give store-bought Budae Jjigae its flavor?
- - You must use foreign sausages containing chicken (e.g., Superior Sausage, Corn King Sausage).
- - It must contain ground meat, which is a mixture of ground pork, ground beef, and various seasonings. This time, I modified it slightly to make it easier to follow.
- Do I have to add baked beans?
- - Baked beans add a soft and savory flavor to Budae Jjigae. If you don't like the texture of the beans, you can mash them with a spoon.
- Do I have to wash the mushrooms?
- - Mushrooms are representative eco-friendly foods and are grown without any pesticides. You can eat them after lightly brushing off any dirt on the surface.
Recipe 🍳
- Cut the Superior Sausage. Cut the Superior Sausage, a foreign sausage containing chicken (using foreign sausage gives it the taste of store-bought Budae Jjigae). Cut it into various shapes to give the impression of different sausages being included when eaten.
- Make the seasoning paste. Cut 1/3 of the Spam and put it in a bag and mash it (this acts as the ground meat for store-bought Budae Jjigae). Add the ground pork. Add grated onion. Add minced garlic to the bag. Add doenjang to the bag. Add gochujang to the bag. Add gochugaru to the bag. Add guk-ganjang to the bag. Add mirin to the bag. Add black pepper to the bag. Add beef dasida to the bag. Mix everything well in the bag (it tastes good if you boil it right away, but it tastes even better if you let it rest in the refrigerator for about 3 hours).
- Prepare the ingredients. Cut the green onions lengthwise in a cross shape, then cut them into bite-sized pieces. Tear the thin parts of the oyster mushrooms by hand and split the thick parts in half using your fingernails. Cut off the base of the enoki mushrooms. Chop the aged kimchi (it doesn't have to be very sour kimchi). Mince the Cheongyang peppers. Cut the tofu for stew into bite-sized pieces (tofu for frying is also fine).
- Boil the Budae Jjigae. Place the tofu on the bottom. Add the green onions. Add the oyster mushrooms. Add the sausages. Add the bacon. Add the Spam. Add the seasoning paste. Add the kimchi. Add the enoki mushrooms. Add the Cheongyang peppers. Add the store-bought beef bone broth. Add water. Add the baked beans. After boiling for about 5-10 minutes, add the ramen noodles. Add the cheese.
- Cut sausages and spam into bite-sized pieces, and prepare the seasoning paste.
- Place all ingredients, seasoning paste, and broth in a pot and boil.
- Add ramen noodles and cheese for an even richer enjoyment.
