Ttukdak Hyung's Galchisokjeot Seasoning Sauce

A meat restaurant-style seasoning sauce that maximizes deep umami by simmering galchisokjeot with soju, plenty of minced garlic, and chili peppers until slightly thickened.

  • Galchisokjeot, as needed
  • Soju, a little
  • Gochugaru, a little
  • Minced garlic, 1 tbsp
  • Minced cheongyang chili pepper, a little
  • Minced red chili pepper, a little

Recipe 🍳

  1. Finely chop the cheongyang chili pepper and red chili pepper with a knife so they blend well into the sauce rather than floating on top.
  2. Squeeze a generous amount of umami-rich galchisokjeot into a small earthenware pot or mini pan.
  3. Pour soju over the jeotgal until it is just submerged; this will remove the fishy smell and adjust the consistency.
  4. Add gochugaru for spiciness, minced garlic for pungent flavor, and the minced cheongyang and red chili peppers.
  5. Turn the heat to low and stir with a spoon to prevent the seasonings from clumping, and simmer gently until the sauce thickens. Finish.
  1. Finely chop the cheongyang and red chili peppers so they are easy to mix into ssamjang.
  2. In a mini pan, measure out galchisokjeot, soju, gochugaru, minced garlic, and minced chili peppers together.
  3. Over low heat, stir so the seasoning doesn't burn, and boil until it reaches a thick ssamjang-like consistency.

  • The strong fishy smell of galchisokjeot will evaporate into the air along with the alcohol in soju during the boiling process, so feel free to boil it thoroughly without worry.
  • When grilling meat, place the small pot of seasoning sauce on one side of the grill pan and let it simmer. Dip the meat generously or wrap it in lettuce with the sauce for a much more delicious experience.
