Cooking tips
- When reducing a large-batch recipe to a small portion, moisture evaporates quickly. Therefore, add more water than the recipe calls for and simmer to ensure the flavors of the meat and vegetables are fully extracted.
- Adding chili powder while the mixture is hot can cause it to cook, resulting in a dull taste or raw flavor. It must be mixed after cooling completely.
- The finished sauce tastes even better if it's aged in the refrigerator for at least half a day, allowing the chili powder to hydrate and develop a smoother, deeper flavor.
- For a spicier kick, mix in Cheongyang chili powder according to your preference. Adding chopped kimchi or onion as a garnish when mixing can also enhance the flavor.
Recommended for
- Those who want to easily recreate the popular bibim-guksu flavor from Kang Sik Dang 2 at home in a small portion.
- Those who prefer the deep, rich umami of meat over the sweet and sour taste of gochujang-based bibim-guksu.
- Those who want an all-purpose sauce that can be made ahead and used for various noodle dishes like bibim-myeon or somen.
