Ttukdak Hyung's Samgyeopsal Kimchi Rice

Pork belly and kimchi pot rice, a hearty one-bowl meal made by stir-frying or topping rice with kimchi, thinly sliced pork belly, and spicy chili paste.

Ingredients needed 🛒4 servings

  • Rice: 3 cups (based on a paper cup, 450g)
  • Water: 3 cups (based on a paper cup, 540ml)
  • Cooking oil: a little
  • Thinly sliced pork belly: 300g
  • Salt: a little
  • Pepper: a little
  • Kimchi: 300g
  • Red pepper flakes: 1 tablespoon
  • Anchovy sauce: 2 tablespoons
  • Soy sauce: 2 tablespoons
  • Beef Dashida: 1/2 tablespoon
  • Scallions: 200g
  • Sesame oil: 1 tablespoon

Recipe 🍳

  1. Wash 3 cups of rice (based on a paper cup, 450g) thoroughly, then soak it in 3 cups of water (based on a paper cup, 540ml).
  2. Lightly grease a pan with cooking oil, add 300g of thinly sliced pork belly, season with a little salt and pepper, and stir-fry.
  3. Cut 300g of kimchi into bite-sized pieces, add it to the stir-fried pork, and stir-fry over high heat with the following seasonings: 1) 1 tablespoon red pepper flakes 2) 2 tablespoons anchovy sauce 3) 2 tablespoons soy sauce.
  4. When the kimchi becomes translucent, add the soaked rice and all the water, then add 1/2 tablespoon of beef Dashida and mix once.
  5. Once the water boils, cover with a lid, reduce heat to low, and cook for 15 minutes. Turn off the heat and let it steam, covered, for 10 minutes.
  6. Finally, thinly chop 200g of scallions, sprinkle them on top, and mix well with 1 tablespoon of sesame oil.
  1. Prepare the ingredients and seasonings to be placed on top of the rice.
  2. Cook the main ingredients in a pan or pot and season.
  3. Serve over warm rice and finish with toppings or sauce.
