- 1-2 whole squid
- some all-purpose meat batter for donggeurangttaeng
- some flour
- 2 eggs
- some cooking oil
Recipe 🍳
- Separate the legs from the whole squid, wash them thoroughly under running water, and finely mince them with a knife.
- Add the minced squid legs to the pre-made all-purpose meat batter and knead until evenly mixed.
- Remove the innards from the squid tubes, wash them clean, lightly dust the inside with flour, then firmly stuff the meat batter mixed with squid legs into the tubes, filling them completely without gaps.
- Without steaming, slice the stuffed squid tubes raw into bite-sized pieces using a knife, being careful not to let the filling fall out.
- Lightly coat the cut surfaces of the squid slices with flour, then thoroughly dip them in beaten egg wash.
- Heat oil in a pan, place the egg-coated squid sundae slices in the pan, and cook over low heat until the filling is firm and the meat is fully cooked, flipping to brown both sides.
- Mince squid legs and mix with meat batter, then stuff the mixture into squid tubes.
- Slice the stuffed squid, then coat the cut surfaces with flour and egg wash in order.
- Pan-fry in oil over low heat until golden brown on both sides and cooked through.
Cooking tips 💡
- Stuff the squid tubes only 80-90% full, as overstuffing may cause them to burst when slicing or frying.
- Dusting the inside of the tubes with flour beforehand prevents the filling from separating from the squid skin when the squid shrinks during cooking.
- Cover the pan with a lid while cooking over low heat to ensure even cooking without burning the outside.
