Ttukdak Hyung's Dak-hanmari with Dipping Sauce

Whole chicken soup with dipping sauce, made by boiling whole chicken, radish, and Cheongyang chili peppers in a spicy chili paste for a hearty broth.

Ingredients needed 🛒1 servings

  • Whole chicken: 1kg
  • Radish: 300g
  • Green onion: 2 stalks (200g)
  • Onion: 1 (150g)
  • Garlic: 20 cloves (50g)
  • Cheongyang chili pepper: 3 (30g)
  • Whole peppercorns: 10g
  • Anchovy sauce: 2 tbsp
  • Soup soy sauce: 2 tbsp
  • Chicken stock: 1 tbsp
  • Potatoes: 2
  • Kalguksu noodles: 1 serving
  • Green onion: 1 stalk
  • Chives: to taste
  • Gochugaru (chili powder): to taste
  • Chicken broth: 5 tbsp
  • Gochugaru (chili powder): 2 tbsp
  • Minced garlic: 1 tbsp
  • Vinegar: 1 tbsp
  • Mustard: 1/2 tbsp
  • Black pepper: 1/2 tbsp
  • Chives: a little

Recipe 🍳

  1. Wash 1kg of whole chicken thoroughly, then trim the protruding anus and wing tips.
  2. Cut open the belly with scissors and spread it out, then wash the inside thoroughly under running water.
  3. Pour 2L of water into a pot, add the ingredients below, and boil over high heat for 30 minutes. 1) Prepared chicken 2) 300g radish 3) 2 stalks (200g) green onion 4) 1 (150g) onion 5) 20 cloves (50g) garlic 6) 3 (30g) Cheongyang chili peppers 7) 10g whole peppercorns.
  4. After 30 minutes, remove the chicken and cut it into large pieces.
  5. While the chicken is removed, continue boiling the remaining broth until it reduces by half (to 1L).
  6. Strain the finished broth through a sieve to remove solids.
  7. Set aside about 5 tbsp of the finished broth.
  8. Add the prepared chicken to the broth and season with the ingredients below. 1) 2 tbsp anchovy sauce 2) 2 tbsp soup soy sauce 3) 1 tbsp chicken stock.
  9. Once the broth is boiling vigorously, add the ingredients below and cook until done. 1) 2 potatoes 2) 1 serving kalguksu noodles 3) 1 stalk green onion 4) Chives to taste.
  10. Finally, sprinkle with gochugaru (chili powder) to finish.
