  • 1 bowl of cold rice
  • 3 cups water
  • 3-4 crab sticks
  • 1/2 green onion
  • 1 egg
  • 1 tbsp chicken stock
  • 1.5 tbsp starch powder
  • 1.5 tbsp water (for starch slurry)
  • 1 tsp sesame oil

Recipe 🍳

  1. Spread cold rice thinly and evenly on the bottom of the air fryer basket.
  2. Bake at 200°C for 25 minutes to make crispy, oil-free homemade nurungji.
  3. Place the finished nurungji in a pot, add the measured water, and boil to create a savory sungnyung base.
  4. When the broth boils, add the chicken stock for a Chinese-style flavor, adjusting seasoning and umami to taste.
  5. Thinly shred the crab sticks by hand along the grain, slice the green onion, and add both to the pot.
  6. Beat the egg and gently drizzle it in a circular motion over the boiling broth to form soft egg ribbons.
  7. Mix equal parts starch and water to make a slurry, add spoonful by spoonful while stirring to thicken, then finish with sesame oil.
