Recipe

Separate 6 eggs into whites and yolks cleanly, placing each in a deep bowl.
In the bowl with yolks, add sugar 30g, a pinch of salt, and vegetable oil 30g, and mix thoroughly until sugar dissolves gradually.
Sift all-purpose flour 140g through a fine sieve, then add it to the yolk mixture. Gradually incorporate milk 40g and honey 50g, mixing until no lumps remain.
Using a whisk, beat the egg whites in one direction only, adding sugar 60g in two or three batches, until stiff peaks form—firm and not runny.
Add half of the finished meringue to the yolk-flour mixture, gently folding with a spatula to avoid deflating the bubbles.
Fold in the remaining meringue by lifting from the bottom and folding upward quickly and lightly to complete the final batter.
Thoroughly coat the inside of the rice cooker’s inner pot with olive oil or butter, covering both the bottom and sides to ensure easy release after cooking.
Pour the finished batter into the inner pot, then tap the rice cooker on the floor several times to remove large air bubbles.
Steam the castella using the rice cooker’s steaming function for 40 minutes, or use the regular cooking button and once it switches to keep-warm mode, press cooking again to run a second cycle total.
As soon as cooking finishes, open the lid immediately before steam condenses to prevent the castella from collapsing or becoming soggy. Invert it onto a cooling rack and let it cool completely before slicing to desired size.

Mix egg yolks with sugar, vegetable oil, sifted all-purpose flour, milk, and honey in order to make a smooth base batter.
Whisk egg whites with sugar added in portions, beating in one direction only to achieve stiff, non-runny meringue.
