square fish cake 2 pieces
green onion 1 stalk
gochujang 4 tablespoons
vegetable oil 1 tablespoon
water 3 cups (600ml)
instant dashi powder 1 small spoon
tteokbokki tteok 300g
black pepper three pinches

Recipe

Boil 100g wheat noodles in boiling water for 7 minutes, then add chopped onion and carrot (one handful each) and cook for an additional 1 minute. Drain thoroughly through a colander.
Toss the drained noodles and vegetables with 3 tablespoons soy sauce, 0.5 tablespoon sugar, and 1 small spoon sesame oil. Mix well to evenly distribute seasoning and prepare a quick, simple japchae.
Cut the 2 square fish cakes into bite-sized squares. Chop the 1 green onion into large diagonal slices for cooking preparation.
In a pot, heat 4 tablespoons gochujang and 1 tablespoon vegetable oil over medium heat. Stir continuously to prevent burning and sauté the gochujang until its thick, raw aroma dissipates.
Once the gochujang is well-sautéed, turn off the heat briefly, add 3 tablespoons soy sauce and 2 tablespoons sugar, then return to medium heat and stir-fry to boost flavor.
When all seasoning ingredients are well blended and cooked through, pour in 3 cups (600ml) water and increase heat to high. Add 1 small spoon instant dashi powder and bring to a boil.
When the broth begins to bubble vigorously, add the prepared fish cake and green onion. Simmer for a moment to allow deep savoriness to develop.
As the broth returns to a boil, add 300g cleaned tteokbokki tteok. Maintain high heat and continue cooking until the tteok becomes soft and tender.
Once the tteok is fully cooked and soft, add the pre-seasoned quick japchae and stir for 2 minutes to let the sauce fully penetrate.
Just before turning off the heat, add three pinches of black pepper and mix thoroughly to enhance the spicy aroma. Serve immediately.

Sauté gochujang and vegetable oil in a pan, then add soy sauce and sugar to build umami depth. Add water and instant dashi powder to make the broth.
