Ingredients needed 🛒2 servings
- 350g chicken thigh meat
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons sugar
- 1 tablespoon vinegar
- a pinch of black pepper
- 1 tablespoon starch powder
- appropriate amount whole garlic cloves
- 1/2 onion
- 2 cheongyang chili peppers
- generous amount of sesame seeds
Recipe 🍳
- Cut the chicken thigh meat into bite-sized pieces.
- Add 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 2 tablespoons sugar, 1 tablespoon vinegar, a pinch of black pepper, and 1 tablespoon starch powder to the prepared chicken, and mix well so the seasoning coats evenly.
- Heat oil in a pan, then add the garlic and seasoned chicken and start stir-frying.
- Thanks to the starch, the seasoning adheres to the surface of the meat as it cooks, so stir-fry carefully, flipping occasionally to prevent burning.
- When the chicken is about 70% cooked, add the onion cut into bite-sized pieces and the cheongyang chili peppers.
- Cook until the onion retains a slight crunch and the chicken is cooked through.
- Turn off the heat, sprinkle generously with sesame seeds, mix, and finish.
- Cut the chicken thigh, then mix with soy sauce, oyster sauce, sugar, vinegar, and starch powder.
- Put the garlic and seasoned chicken in a pan, stir-fry, then add onion and cheongyang chili peppers.
- When the meat is fully cooked, sprinkle with sesame seeds to finish.
Cooking tips 💡
- Adding starch powder helps the sauce cling to the meat and season it well without any marinating time.
- Because of the starch, the bottom of the pan may stick or burn, so cook over medium-high heat while stirring.
- Adding cheongyang chili peppers cuts through the richness of the sweet and salty sauce cleanly.
