- 1-2 pieces chicken thigh
- 1 handful whole garlic cloves
- 1-2 handfuls bean sprouts
- Pinch of salt
- Pinch of black pepper
Recipe 🍳
- Pat the chicken thigh dry, place it skin-side down in a pan, and season with salt and pepper.
- Cover the pan and heat over high heat for about 5 minutes to achieve a golden brown and crispy skin.
- Flip the chicken thigh to cook the other side, then cut into bite-sized pieces and set aside on a plate.
- Add sliced garlic to the oil and drippings (fond) left in the pan from cooking the chicken and stir-fry until golden brown to release its aroma.
- Once the garlic is fragrant, add the bean sprouts and stir-fry quickly over high heat until they are just tender, before they release too much moisture, to maintain their crunch.
- Arrange the stir-fried bean sprouts and garlic on a plate, then top with the crispy pan-fried chicken thigh to finish.
- Place chicken thigh skin-side down in a pan, cover, and cook for 5 minutes until crispy.
- Remove chicken, then stir-fry garlic and bean sprouts in the rendered chicken fat over high heat until crisp-tender.
- Serve by placing the stir-fried vegetables on a plate and topping with the cooked chicken thigh.

- Chicken thigh has a lot of its own fat, so do not add cooking oil; cook it in its own skin's oil to prevent it from being too greasy.
- Bean sprouts will become limp and release water if overcooked, so stir-fry them quickly over high heat to maintain their crispiness.
- A splash of vinegar over the finished dish can cut through the richness of the chicken thigh, making it taste cleaner.
