- 500~600g pork neck
- 2 cups chopped kimchi
- water enough to cover pork neck about 1/3 of the way
- 2 tablespoons gochujang
- 1 tablespoon jin ganjang
- 1 tablespoon sugar
- 1 tablespoon red chili powder
- 1 tablespoon minced garlic
- 0.5 tablespoon chicken stock (or beef dashi)
- 2 small potatoes
- 2~3 green chili peppers

Recipe 🍳
- Cut the pork neck into thick, large pieces as if preparing galbi-style stew.
- Place the prepared meat in a pan and add water just enough to cover about one-third of the meat.
- Add 2 cups of chopped kimchi, 2 tablespoons gochujang, 1 tablespoon jin ganjang, 1 tablespoon sugar, 1 tablespoon red chili powder, and 1 tablespoon minced garlic.
- Add 0.5 tablespoon chicken stock and mix thoroughly until all seasonings are well dissolved in the broth.
- Simmer over medium heat for about 20 minutes, gently cooking until the flavors penetrate the meat and it becomes tender.
- When the broth reduces to about half, add sliced potatoes and green chili peppers for extra spice.
- Push the potatoes down into the broth so they're fully submerged, then cover the pan and simmer again until the potatoes are soft and fully cooked.
- Transfer to a serving bowl, arrange attractively, and sprinkle with black sesame seeds before serving.
- In a pot, combine thickly sliced pork neck with enough water to barely cover, along with chopped kimchi, seasoning amounts, and chicken stock. Mix well.
- Simmer over medium heat for 20 minutes. Once the broth reduces, add potatoes and green chili peppers.
- Cover the pot and continue simmering until the potatoes are fully cooked, then finish with a sprinkle of black sesame seeds.
