Ingredients needed 🛒1 servings

  • cold rice or instant rice (unheated) 1 bowl
  • enoki mushroom 1 pack
  • beef slice (or thinly sliced meat) as much as desired
  • soy sauce 2 tablespoons
  • sugar 1/2 tablespoon
  • red pepper powder 1 tablespoon
  • vinegar 1 tablespoon
  • sesame oil 1 tablespoon
  • toasted sesame seeds 1 tablespoon
  • green onion a little
  • egg yolk 1 piece

Recipe 🍳

  1. Prepare a microwave-safe bowl and evenly spread cold rice or unheated instant rice inside.
  2. Trim the stems of the enoki mushrooms and chop them into bite-sized pieces, then generously layer them over the rice without gaps.
  3. Place the prepared beef slices on top of the mushrooms, spreading them out so they don’t overlap, filling the bowl to the brim.
  4. Cover the bowl with plastic wrap or a microwave-safe lid; if using plastic wrap, poke a few holes in it, then microwave for 4 to 5 minutes.
  5. While the meat cooks, mix together soy sauce 2 tablespoons, sugar 1/2 tablespoon, red pepper powder 1 tablespoon, vinegar 1 tablespoon, sesame oil 1 tablespoon, and toasted sesame seeds 1 tablespoon to make the mixing sauce.
  6. After removing from the microwave, sprinkle finely chopped green onion around the rice, place the egg yolk in the center, pour the sauce over everything, and mix thoroughly to finish.
  1. In a heatproof container, lay down the rice, then layer chopped enoki mushrooms and beef slices generously and in order.
  2. Cover the container with a lid or plastic wrap and microwave for 4 to 5 minutes until fully cooked.
  3. Add the sauce made from soy sauce, sugar, red pepper powder, vinegar, sesame oil, and toasted sesame seeds, along with green onion and egg yolk, then mix well and enjoy.

Cooking tips 💡

  • The moisture released from the enoki mushrooms helps gently steam the rice and beef, so use plenty—more is better for achieving the ideal texture.
  • If you don’t have beef slices, any thinly sliced meat such as pork belly or ribeye can be used as a substitute.
  • When using instant rice, always cook it directly from the unheated state to retain its texture and allow the mushrooms’ moisture to be absorbed properly without making it soggy.
