Ingredients needed 2 servings

1 zucchini
1 cup (200ml) multigrain rice
1 cup (200ml) water
1 pack (120g) bocconcini cheese

Recipe

Finely shred the zucchini using a mandoline.
Soak the multigrain rice for at least 30 minutes, then drain in a colander for at least 10 minutes.
In a pot, combine the soaked rice, water, and shredded zucchini. Cook over high heat for 10 minutes, then over medium heat for 8 minutes.
Place pieces of cheese here and there on top, then turn off the heat and let it steam for 5 minutes to finish.

Shred the zucchini with a mandoline, soak the multigrain rice, and drain.
Put the rice, water, and zucchini in a pot. Cook over high heat for 10 minutes, then medium heat for 8 minutes.
Add the cheese, turn off the heat, and let it steam for 5 minutes.

Cooking tips

If you need more seasoning, just adding salt is enough.
Drizzle with olive oil at the end according to your taste.
It pairs perfectly with slightly spicy dishes or onion, olive, and kimchi.
