Seungwoo Dad's Sweet Pumpkin Soup

- 1/2 sweet pumpkin (approx. 400g)
- 1 onion
- Approx. 400ml milk (additional milk needed for consistency adjustment)
- 1 tbsp cooking oil
- 1/2 tsp salt
- 1 tbsp maple syrup
Recipe 🍳
- Cut the sweet pumpkin in half, scoop out the seeds with a spoon, and carefully peel off the entire outer skin with a knife.
- To shorten cooking time, slice the peeled sweet pumpkin as thinly as possible into 1cm thick pieces.
- Slice the onion as thinly as possible into strips so it's easy to blend later and its sweetness can be well extracted during sautéing.
- Heat 1 tbsp of cooking oil in a pot over high heat, add the onion, and sauté until it softens and turns slightly brown.
- Add the sliced sweet pumpkin and 2 cups (400ml) of milk to the sautéed onion, reduce heat to medium, and simmer for 10 minutes.
- Never cover the pot while cooking, as milk can easily boil over; monitor the contents closely.
- Once the sweet pumpkin is fully cooked, turn off the heat and blend until smooth using an immersion blender or a regular blender.
- While blending, add more milk as needed to achieve your desired smooth consistency.
- After blending, add 1/2 tsp salt and 1 tbsp maple syrup to adjust seasoning and sweetness to your preference, then simmer briefly to finish.
- Peel and thinly slice the sweet pumpkin, and thinly slice the onion.
- Sauté the onion in a pot, then add the pumpkin and milk and simmer for 10 minutes with the lid off.
- Blend until smooth, adjust consistency with milk, and season with salt and maple syrup.

- When simmering soup with milk, it can boil over instantly, so never cover the pot while cooking.
- Slicing the sweet pumpkin as thinly and as small as possible reduces cooking time, significantly shortening the overall preparation.
- Taste and adjust the seasoning and sweetness only after the soup has been completely blended for accurate flavor.
- Whipping some warm milk separately and topping the finished soup with the foam can provide an even smoother texture.
