- Slice the pork belly into thick, bite-sized pieces using chopsticks as a guide.
- Prepare the spicy seasoning sauce in advance.
- Place the pork belly in a hot pan and fry until the surface is crispy and perfectly browned, like at a Korean BBQ restaurant.
- Tilt the pan to remove the rendered pork fat, which can be greasy, and discard it cleanly.
- Add the prepared sauce and water to the meat, and simmer until the sauce becomes sticky and concentrated.
- When the sauce is well-coated, add the water spinach and stir-fry briefly until wilted, then serve over rice.
- Slice the pork belly thickly and prepare the spicy sauce.
- Fry the pork belly in a pan until crispy, then completely remove the rendered fat.
- Add the sauce and water, simmer, then add water spinach, stir-fry together, and serve over rice.
Cooking tips 💡
- If you slice the pork belly too thin, the thick, chewy texture when fried crispy will be lost, so it's important to cut it with enough thickness.
- Since fresh ginger can be tricky to store and use up, using convenient dried ginger is a handy alternative.
- For the vegetable side, besides water spinach, crunchy green vegetables like spinach, scallions, or bean sprouts all work well.
