  • thinly sliced pork belly, as needed
  • soybean paste, 1 tablespoon
  • sugar, 1 tablespoon
  • chicken stock, 1/4 tablespoon
  • chives or green onion, a little
  • egg yolk, 1
  • sesame seeds, a little
  • rice, 1 bowl

Recipe 🍳

  1. In a pot, add enough water to submerge the pork belly and dissolve 1 tablespoon of soybean paste.
  2. Add the thinly sliced pork belly to the soybean paste water and boil until tender.
  3. To make the sauce, take some of the boiling liquid, add 1 tablespoon of sugar and 1/4 tablespoon of chicken stock, and mix well.
  4. If the sauce is too thick, add more water until it reaches a consistency similar to tonkatsu sauce, thick and smooth.
  5. Wash the chives or green part of the green onion and chop finely.
  6. Place rice in a bowl and top generously with the boiled pork belly.
  7. Drizzle the prepared soybean paste sauce over the meat to taste.
  8. Gently place the chopped chives and egg yolk on top, then sprinkle with sesame seeds to finish.
  1. Boil the thinly sliced pork belly in soybean paste water until tender.
  2. Add sugar and chicken stock to make a soybean paste sauce with the consistency of tonkatsu sauce.
  3. Top rice with the meat, sauce, chives, and egg yolk to complete.

Cooking tips 💡

  • If you don't have chicken stock, you can substitute a small amount of dashida or MSG to add umami.
  • Instead of chives, you can use chopped green onion tops to add both color and aroma.
  • Avoid making the sauce too thin, as it can make the rice soggy; keep it somewhat thick.
