Ingredients needed 🛒1 servings
- thinly sliced pork belly, as needed
- soybean paste, 1 tablespoon
- sugar, 1 tablespoon
- chicken stock, 1/4 tablespoon
- chives or green onion, a little
- egg yolk, 1
- sesame seeds, a little
- rice, 1 bowl
Recipe 🍳
- In a pot, add enough water to submerge the pork belly and dissolve 1 tablespoon of soybean paste.
- Add the thinly sliced pork belly to the soybean paste water and boil until tender.
- To make the sauce, take some of the boiling liquid, add 1 tablespoon of sugar and 1/4 tablespoon of chicken stock, and mix well.
- If the sauce is too thick, add more water until it reaches a consistency similar to tonkatsu sauce, thick and smooth.
- Wash the chives or green part of the green onion and chop finely.
- Place rice in a bowl and top generously with the boiled pork belly.
- Drizzle the prepared soybean paste sauce over the meat to taste.
- Gently place the chopped chives and egg yolk on top, then sprinkle with sesame seeds to finish.
- Boil the thinly sliced pork belly in soybean paste water until tender.
- Add sugar and chicken stock to make a soybean paste sauce with the consistency of tonkatsu sauce.
- Top rice with the meat, sauce, chives, and egg yolk to complete.
Cooking tips 💡
- If you don't have chicken stock, you can substitute a small amount of dashida or MSG to add umami.
- Instead of chives, you can use chopped green onion tops to add both color and aroma.
- Avoid making the sauce too thin, as it can make the rice soggy; keep it somewhat thick.
