Seungwoo Dad's French Crepes
A traditional crepe batter recipe that maximizes the crispy outside, chewy inside texture by using French T65 flour and powdered sugar to retain moisture and enhance the chewiness of the starch.
Using powdered sugar (confectioners' sugar) containing starch instead of regular sugar helps retain moisture in the batter, resulting in a much chewier and crispier texture.
If the pan is flooded with oil or butter, the batter will slide around, making the edges uneven. Therefore, it must be wiped thinly before cooking.
The ideal cooking temperature for crepe batter is around 205ยฐC. Be careful, as the thin batter can burn easily if the heat is too high.
If you are not skilled with the special wooden T-shaped spreader for spreading the batter thinly, it is easier to gently roll the bottom of a ladle or tilt the pan itself by hand to spread it.
