Ingredients needed 1 servings

Recipe

Cooking tips

  • Rinse the blanched bones thoroughly in cold water, and do not stir while boiling, skimming only the foam, for a clean broth.
  • The chashu must be completely chilled in the refrigerator after coating with tare to slice it thinly.
  • Store the remaining broth, chashu, and tare separately in the refrigerator, and the broth can be frozen for storage.

Recommended for

  • Those who want to make authentic shoyu ramen with a deep homemade broth.
  • Those who want to prepare chashu and soy sauce tare from scratch.
