chicken (thigh, breast) each 1 pack
green onion 3 stalks
dried anchovies 50g
kombu 3 pieces
water 2L
soy sauce 1L
mirin as needed
rice wine as needed
sugar as needed
garlic 5 cloves
lard as needed
chicken skin as needed
ramen noodles 1 serving
bonito flakes as needed
menma (bamboo shoot topping) as needed
narutomaki fish cake as needed
boiled egg 1
seaweed as needed
scallion as needed

Recipe 🍳

In a pot, add 2L water, 1 stalk of green onion greens, 50g dried anchovies, 3 pieces kombu, pork, and chicken. Bring to a boil, then simmer on low heat for 40 minutes to make the broth.
Remove the boiled pork for chashu use, strain the broth, chill in the refrigerator, and carefully skim off the clarified fat that rises to the surface.
In a separate pot, combine 1L soy sauce, water, mirin, rice wine, and sugar. Add 1 stalk of green onion greens and 5 crushed garlic cloves. Simmer to make the tare sauce.
Once the tare sauce comes to a boil, add the reserved pork and simmer for 20 minutes. Remove the pork, let it cool and firm up in the fridge, then slice thinly for chashu. Keep the remaining tare sauce for storage.
In a pan, sauté lard, chicken skin, and 1 stalk of chopped white onion on low heat until the onion turns deep golden brown. Strain through a sieve to make the aromatic oil.
Pour 350g of skinned broth into a pot and add bonito flakes. Bring to a boil just before serving.
In a serving bowl, place 50g tare sauce and 15g aromatic oil. Pour the freshly boiled broth over, mixing well.
Boil ramen noodles in salted water for 60–90 seconds, drain, and place in the broth. Arrange the noodles neatly.
Top with thinly sliced chashu (grilled briefly with a torch for extra flavor), menma, narutomaki, boiled egg, seaweed, and finely chopped scallion.

Simmer pork, green onion, dried anchovies, and kombu for 40 minutes to make broth. Remove pork for chashu, strain, chill, and remove fat.
Boil soy sauce, aromatics, mirin, and sugar to make tare sauce. Add reserved pork and simmer 20 minutes to make chashu.
Sauté lard, chicken skin, and white onion to make aromatic oil.
In a bowl, combine tare sauce, aromatic oil, and boiled broth. Add cooked noodles and garnish with prepared toppings.
