  • 2~3 boiled octopus legs
  • 1 potato
  • 6~7 green beans
  • 4~5 cherry tomatoes
  • a little olive oil
  • 3~4 tbsp lemon dressing
  • a little salt
  • a little pepper
  • a little chopped parsley

Recipe 🍳

  1. Slice the pre-boiled, tender octopus into bite-sized pieces and set aside.
  2. Blanch the green beans in salted boiling water for about 1 minute 30 seconds to 2 minutes to remove any fishy smell and preserve their bright color, then cool in cold water and cut into thirds.
  3. Cut the potato into small cubes (about 1 cm or less) and blanch in boiling water until tender.
  4. In a mixing bowl, combine the prepared potato, green beans, and halved cherry tomatoes. Drizzle with olive oil, salt, and pepper, and toss lightly for a first seasoning.
  5. Add the sliced octopus on top of the vegetables, then generously drizzle the sweet and sour lemon dressing over everything.
  6. Gently toss until the dressing is evenly distributed. Plate attractively and sprinkle with chopped parsley to finish.

  2. Cut green beans and potato into bite-sized cubes and blanch each separately in boiling water.
  3. In a bowl, combine potato, green beans, and cherry tomatoes, then toss with olive oil, salt, and pepper first.

Cooking tips 💡

  • Squid can be used instead of octopus and works very well. If using squid, blanch it very briefly like a sashimi to prevent it from becoming tough.
  • This salad is delicious right after mixing, but letting it chill in the refrigerator for a while enhances the flavors and gives a refreshing coolness.
