Ingredients needed 🛒2 servings
- smoked salmon 1 pack
- whipping cream 200ml
- horseradish sauce 3 tablespoons
- sour cream 3 tablespoons
- onion 1/4
- green onion a little
- capers 1~2 tablespoons
- watercress enough
- cucumber 1/2
- whole black pepper a little
- lime 1
Recipe 🍳
- Chop the onion finely and mince the green onion.
- Wrap the capers in kitchen paper and squeeze out all moisture, then lightly chop them.
- In a bowl, whip the cream until it’s firm enough that it doesn’t run when the whisk is inverted.
- Add 3 tablespoons of horseradish sauce, 3 tablespoons of sour cream, chopped onion, minced green onion, and capers to the whipped cream.
- Gently fold the mixture up and down to preserve the volume of the cream, creating the cloud-like sauce.
- Slice the cucumber thinly and wash the watercress thoroughly.
- On a plate, mound the finished cloud sauce generously, shaping it like a fluffy cloud.
- Place the smoked salmon on top of the sauce and arrange the cucumber and watercress harmoniously around it.
- Finally, grind whole black pepper over the dish and grate lime zest on top to finish.
- Chop onion, green onion, and dehydrated capers finely.
- Gently mix the firm whipped cream with horseradish, sour cream, and chopped ingredients to make the sauce.
- Mound the sauce on the plate like a cloud and place salmon, cucumber, and watercress on top.
- Sprinkle with pepper and lime zest to finish.
Cooking tips 💡
- The cream must be whipped completely firm to maintain the cloud-like shape; avoid stirring too vigorously when mixing ingredients.
- For the best balance, place a generous amount of cloud sauce on one piece of salmon and pair it with vegetables for a single, satisfying bite.
