• Always chill the formed patties before cooking to ensure they hold their shape and don’t break or crumble during grilling.
• Since meat shrinks when cooked, always shape the patties slightly larger than the bread to achieve the right final size.
• Press the center of the patty down slightly with your finger to create a slight indentation—this prevents the middle from puffing up during cooking.
