- sugar 20g
- mascarpone cheese as needed
- vanilla bean paste (optional) a little
- lemon 1 piece

- Rinse the mulberries thoroughly under running water, then drain completely using a sieve.
- Remove the stems by pulling them off with your hands or cutting them cleanly with a knife.
- Place half of the prepared mulberries (100g) in a pot, add 20g sugar and a small amount of vanilla bean paste.
- Cook over high heat until moisture begins to evaporate, then turn off the heat just before the liquid fully reduces and the sauce thickens.
- Once cooled completely, gently mix in the remaining fresh mulberries, being careful not to crush the fruit.
- Spoon generous amounts of smooth mascarpone cheese onto a plate and spread it flat with a spoon.
- Layer the mixed mulberry mixture, including the syrup, generously on top of the cheese.
- Grate only the yellow outer layer of the lemon peel and sprinkle it over the dish, then garnish with apple mint for added visual appeal and aroma.
- Gently simmer half of the cleaned mulberries with sugar and vanilla over low heat, then cool completely.
- Mix the cooled sauce with the remaining fresh mulberries to maintain a pleasant texture.
