Soak the julienned sweet potatoes in cold water for at least 15 minutes to remove sufficient starch. If the water becomes cloudy, rinse a couple more times.

Drain the sweet potatoes from the starch-removing water onto a colander and completely remove the moisture. Residual moisture can be dangerous when frying, so be sure to pat them dry with paper towels.

Generously fill a pan with cooking oil and preheat to about 160-170 degrees Celsius. Do not fill the pan too full with oil, as it may boil over due to moisture.

Add the sweet potatoes in small batches to the preheated oil, and use chopsticks to separate them so they don't stick together while frying.

Fry for about 4-6 minutes, depending on the heat, to evaporate the moisture. Do not wait until they are completely hard in the oil; remove them as soon as they turn golden brown.

The fried sweet potato sticks will become crispy as they cool. You can either toss them with sugar while hot, or make a syrup by simmering sugar and water in a pan and then lightly coating the sticks to finish.

Julienne sweet potatoes to a uniform thickness, soak in water for 15 minutes to remove starch, and thoroughly dry.
Add sweet potatoes to oil heated to 160-170 degrees Celsius, stir to prevent sticking, and fry until golden brown.
Remove from oil, let cool slightly, and finish by sprinkling with sugar or coating in syrup, according to preference.

Cooking tips

When using a mandoline slicer, there is a high risk of cutting your hands, so wear thick safety gloves or be extremely careful.
If the sweet potato thickness is not uniform, the thinner parts may burn first and taste bitter, so cut them to as uniform a thickness as possible.
If there is residual moisture when adding to the oil, it can splatter or boil over, which is dangerous, so remove the moisture completely.
If you wait until they are completely hard in the oil while frying, they can easily burn when removed. Therefore, remove them when they turn golden brown and let them cool to achieve crispiness.
