- dried anchovies 150g
- oligodextrin 3 tablespoons
- mayonnaise 1 tablespoon
- whole sesame seeds to taste
Recipe 🍳
- On a dry pan, toast 150g of dried anchovies over low heat without oil to remove any fishy odor.
- Turn off the heat once the anchovies are crisp and golden brown.
- While the heat is still on, add oligodextrin in about three large swirls.
- Let the pan cool slightly, then mix the oligodextrin and anchovies evenly.
- Once the mixture has cooled a bit, add 1 tablespoon of mayonnaise and mix thoroughly to coat.
- Finish by generously sprinkling with whole sesame seeds.
- Toast dried anchovies in a dry pan over low heat to eliminate fishy smell.
- Turn off the heat and add oligodextrin, mixing evenly.
- After cooling slightly, mix in mayonnaise and whole sesame seeds.
Cooking tips 💡
- Avoid high heat, as it can easily burn the anchovies and make them hard—always use low heat or residual heat.
- The mayonnaise added at the end acts as a coating agent, helping maintain a soft texture even after refrigeration.
