Recipe

Squeeze out excess moisture from the old kimchi, cut it in half lengthwise, then slice into 1cm pieces. (Chop the stem end finely as well.)
Add a pinch of sugar to the sliced old kimchi and rub it gently to help eliminate its characteristic strong odor.
Place the small anchovies and 1 teaspoon of mirin into a cold pan and mix thoroughly to coat the anchovies with mirin first.
Turn on medium heat, add 1 tablespoon of vegetable oil around the pan, and stir-fry for 3 minutes until slightly crisp but still moist. Spread evenly on a plate and let cool.
Clean the pan, add another 1/2 tablespoon of vegetable oil, then add the marinated old kimchi. Stir-fry over medium-low heat for 2 minutes until some moisture evaporates.
Add 1/2 tablespoon of minced garlic and continue stir-frying for 1 minute to infuse the garlic aroma.
Lower the heat slightly, add the previously stir-fried anchovies and 1/3 tablespoon of sugar, and stir-fry together for 1 minute.
Sprinkle 1/2 tablespoon of sesame oil and toasted sesame seeds, mix well, and finish by adding chopped green chili peppers if desired.

Squeeze moisture from old kimchi and marinate with sugar; coat small anchovies with mirin and stir-fry in oil until slightly moist.
Stir-fry the old kimchi in oil, then add minced garlic to enhance flavor.
Combine the stir-fried anchovies, sugar, sesame oil, and toasted sesame seeds, mixing well to complete.
