Ok Jubu's Minari Mushroom Fried Rice

  • 1 bowl of rice (cold or instant rice)
  • One handful of minari
  • 1 shiitake mushroom
  • One handful of ground beef
  • 5 tablespoons soy sauce
  • 0.5 tablespoon sugar
  • 1 tablespoon gochugaru
  • 1 tablespoon water
  • 1 heaping tablespoon minced garlic
  • 1 drizzle of sesame oil
  • A little toasted sesame seeds
  • A little cooking oil

Recipe 🍳

  1. Finely chop the minari into small pieces and thinly slice the shiitake mushroom.
  2. In a small bowl, combine 5 tablespoons soy sauce, 0.5 tablespoon sugar, 1 tablespoon gochugaru, 1 tablespoon water, 1 heaping tablespoon minced garlic, a drizzle of sesame oil, and toasted sesame seeds to make a seasoned soy sauce for mixing.
  3. Heat a pan with some cooking oil, add the ground beef and sliced shiitake mushroom, and stir-fry until the meat is cooked.
  4. Once the meat and mushroom are well stir-fried, add 1 bowl of cold or instant rice and stir-fry, breaking up the rice with a spatula.
  5. When the rice is evenly stir-fried, gather it into a mound in the center of the pan. Add a swirl of water along the edge of the pan to retain moisture.
  6. Generously pile the chopped minari on top of the rice, then immediately cover the pan with a lid. Steam over low heat for 2 minutes to infuse the minari aroma.
  7. Turn off the heat, check that the minari has slightly wilted, then serve in a bowl with the prepared seasoned soy sauce on the side.
