Ok Jubu's Minari Mushroom Fried Rice

- 1 bowl of rice (cold or instant rice)
- One handful of minari
- 1 shiitake mushroom
- One handful of ground beef
- 5 tablespoons soy sauce
- 0.5 tablespoon sugar
- 1 tablespoon gochugaru
- 1 tablespoon water
- 1 heaping tablespoon minced garlic
- 1 drizzle of sesame oil
- A little toasted sesame seeds
- A little cooking oil
Recipe 🍳
- Finely chop the minari into small pieces and thinly slice the shiitake mushroom.
- In a small bowl, combine 5 tablespoons soy sauce, 0.5 tablespoon sugar, 1 tablespoon gochugaru, 1 tablespoon water, 1 heaping tablespoon minced garlic, a drizzle of sesame oil, and toasted sesame seeds to make a seasoned soy sauce for mixing.
- Heat a pan with some cooking oil, add the ground beef and sliced shiitake mushroom, and stir-fry until the meat is cooked.
- Once the meat and mushroom are well stir-fried, add 1 bowl of cold or instant rice and stir-fry, breaking up the rice with a spatula.
- When the rice is evenly stir-fried, gather it into a mound in the center of the pan. Add a swirl of water along the edge of the pan to retain moisture.
- Generously pile the chopped minari on top of the rice, then immediately cover the pan with a lid. Steam over low heat for 2 minutes to infuse the minari aroma.
- Turn off the heat, check that the minari has slightly wilted, then serve in a bowl with the prepared seasoned soy sauce on the side.
- Finely chop minari and slice shiitake mushroom.
- Make a seasoned sauce with soy sauce, sugar, gochugaru, water, garlic, and sesame oil.
- In a pan with oil, stir-fry beef and mushroom, then add rice and stir-fry together.
- Top the rice generously with minari, cover, and steam over low heat for 2 minutes.

- If you stir-fry the minari from the beginning like meat, it will lose its crunchy texture and become tough. The key trick of Housekeeping King Ok Jubu is to only cook it with residual heat and steam by covering the lid at the final stage.
