Recipe 🍳

  1. Remove the plastic wrap from the enoki mushrooms and cut off the root end. Slice into bite-sized pieces, about 1-2 cm thick.
  2. In a small bowl, combine 0.5 tbsp gochujang, 2 tbsp oyster sauce, and 1 tbsp gochugaru. Mix well to make the seasoning paste.
  3. Drizzle some cooking oil into a pan and heat it up. Crack in 2 eggs and stir to make scrambled eggs.
  4. Once the eggs are cooked but still moist, transfer them to a separate plate to prevent overcooking.
  5. In the same pan, add all the sliced enoki mushrooms. Stir-fry over medium-high heat until they wilt and release moisture.
  6. Continue frying until the liquid evaporates completely and the mushrooms turn golden brown, enhancing their aroma.
  7. Add 1 bowl of rice and the prepared seasoning paste to the pan. Reduce the heat to low and stir-fry, mixing well to prevent the sauce from burning.
  8. Once the rice is evenly coated and hot, spread it flat on the bottom of the pan. Top with the reserved scrambled eggs, sprinkle with toasted sesame seeds and parsley, and serve.
