- chicken thighs 500g
- salt a pinch
- pepper a pinch
- mirin 2 tablespoons
- butter 1 tablespoon
- soy sauce 3 tablespoons
- cooking sugar (or honey) 2 tablespoons
- oyster sauce 1 tablespoon
- vinegar 1 tablespoon
- minced garlic 0.5 tablespoon
Recipe 🍳
- Rinse chicken thighs under running water, remove excess blood, and pat dry with kitchen paper.
- Pierce both sides of the chicken with a fork to create small holes so marinade can penetrate evenly.
- Rub salt, pepper, and mirin into the chicken and mix well to prepare the basic marinade.
- In a bowl, combine soy sauce 3 tablespoons, cooking sugar 2 tablespoons, oyster sauce 1 tablespoon, vinegar 1 tablespoon, and a pinch of minced garlic to make the sauce.
- Melt butter in a heated pan, then place the marinated chicken thighs and sear on both sides until golden brown.
- When the chicken is about 75% cooked, pour the prepared sauce over it.
- Simmer until the sauce thickens and coats the chicken with a glossy finish, turning occasionally to cook evenly.
- Wash chicken thighs, dry thoroughly, and poke with a fork.
- Marinate with salt, pepper, and mirin.
- Mix soy sauce, cooking sugar, oyster sauce, vinegar, and minced garlic for the sauce.
- Sear chicken thighs on both sides in butter until golden.
- Once mostly cooked, add sauce and reduce until glossy and well-coated.
