Okjubu's Chicken Gomtang

A creamy, rich chicken gomtang that tastes like it was simmered all day, made in just 15 minutes using chicken thigh meat and mayonnaise

  • chicken thigh meat 400g
  • green onion 1 bunch
  • mayonnaise 1 tablespoon
  • chicken stock 1 tablespoon
  • minced garlic 1 tablespoon
  • a pinch of seasoning salt
  • a pinch of pepper
  • water 1.2L

Recipe 🍳

  1. Chop green onion finely and prepare generously. Pat the chicken thigh meat completely dry with kitchen paper.
  2. Sear the chicken thigh meat in a pan until golden brown, rendering out the chicken fat.
  3. Add 1 tablespoon of mayonnaise and 1 tablespoon of chicken stock to the seared meat, and stir-fry together to enhance the richness and depth of flavor.
  4. Pour in water and simmer for 15 minutes until the broth turns milky white. Season with minced garlic and a pinch of seasoning salt.
  5. Transfer to a bowl, sprinkle with pepper, and top generously with prepared green onion to finish.
