Okjubu's Chicken Gomtang
A creamy, rich chicken gomtang that tastes like it was simmered all day, made in just 15 minutes using chicken thigh meat and mayonnaise

- chicken thigh meat 400g
- green onion 1 bunch
- mayonnaise 1 tablespoon
- chicken stock 1 tablespoon
- minced garlic 1 tablespoon
- a pinch of seasoning salt
- a pinch of pepper
- water 1.2L
Recipe 🍳
- Chop green onion finely and prepare generously. Pat the chicken thigh meat completely dry with kitchen paper.
- Sear the chicken thigh meat in a pan until golden brown, rendering out the chicken fat.
- Add 1 tablespoon of mayonnaise and 1 tablespoon of chicken stock to the seared meat, and stir-fry together to enhance the richness and depth of flavor.
- Pour in water and simmer for 15 minutes until the broth turns milky white. Season with minced garlic and a pinch of seasoning salt.
- Transfer to a bowl, sprinkle with pepper, and top generously with prepared green onion to finish.
- Chop green onion and remove moisture from chicken thigh meat.
- Sear chicken thigh meat in a pan, then add mayonnaise and chicken stock and stir-fry together.
- Add water and simmer for 15 minutes, then season with minced garlic and seasoning salt.
- Serve in a bowl and garnish with green onion and pepper.
