Ingredients needed 🛒2 servings
- carrot 0.5 piece
- sweet potato 1 piece
- onion 0.5 piece
- green onion 0.5 stalk
- tempura flour 1.5 cups
- water 1.5 cups
- vegetable oil as needed
Recipe 🍳
- Thinly slice the carrot, sweet potato, onion, and green onion into uniform, thin strips.
- In a large bowl, combine 1.5 cups tempura flour and 1.5 cups cold water in a 1:1 ratio, gently mixing until no dry flour remains.
- Add the sliced vegetables to the finished batter and toss thoroughly so each piece is evenly coated.
- Pour generous amounts of vegetable oil into a pan and heat until hot. Form the battered vegetables into manageable-sized portions and add them to the oil.
- Fry, turning occasionally, until golden brown and crispy on both sides, then remove and drain excess oil.
- Slice all prepared vegetables into thin strips.
- Mix 1.5 cups tempura flour with 1.5 cups water to create a crispy batter.
- Toss the vegetables in the batter and fry in oil until golden and crisp.
Cooking tips 💡
- Using ice-cold or chilled water when making the tempura batter results in a much crispier coating.
- For even crispier texture, fry the vegetables once lightly, remove, then increase oil temperature and quickly fry again for a second time.
