  • carrot 1~2 pieces
  • coarse salt a pinch
  • olive oil 3 tablespoons
  • lemon juice 2 tablespoons
  • whole grain mustard 1.5 tablespoons
  • stevia (or sugar) 1 tablespoon
  • whole black pepper a pinch

Recipe 🍳

  1. Julienne the carrots into thin strips.
  2. Sprinkle coarse salt over the julienned carrots and mix well, then let them sit for about 10 minutes to marinate.
  3. Squeeze out all the moisture from the marinated carrots using your hands and transfer to a bowl.
  4. In a separate bowl, combine 3 tablespoons olive oil, 2 tablespoons lemon juice, 1.5 tablespoons whole grain mustard, 1 tablespoon stevia, and freshly ground black pepper to make the dressing.
  5. Mix the drained carrots thoroughly with the dressing, transfer to an airtight container, and refrigerate for about two days to allow flavors to mature before serving chilled.
