Lee Won-il's Kkodeul Carrot Kimchi

A unique crunchy kimchi made by adding microwave-heated spicy oil seasoning to common kkakdugi seasoning, wilting the carrots.

Cooking tips

  • If you microwave the seasoning for too long at once, the gochugaru can burn easily, so be sure to heat it in 1-minute bursts, checking each time; this way the surface of the gochugaru will be lightly cooked like soboro, making it more delicious.
  • Right after mixing, it may taste a bit salty, but moisture will come out of the carrots and balance the seasoning, so it's best to follow the given amounts.

Recommended for

  • Those who want to try a different vegetable side dish besides daily cabbage kimchi or radish kimchi.
  • Those who want to quickly complete a crunchy textured side dish without a salting process.
