Okjubu's Busan Red Fish Cake

  • square fish cake 5 pieces
  • rice cake 2 pieces
  • green onion 1 stalk
  • gochujang 1 tablespoon
  • oligodextrin 1 tablespoon
  • red pepper powder 1 tablespoon
  • sugar 1 tablespoon
  • doenjang 0.5 tablespoon
  • minced garlic 1 tablespoon
  • dried anchovy-kombu broth 500ml

Recipe 🍳

  1. Cut green onion in half lengthwise and slice thinly into small pieces.
  2. In a bowl, mix gochujang, oligodextrin, red pepper powder, sugar, doenjang, and minced garlic to make the seasoning paste.
  3. Thread square fish cakes and rice cakes onto skewers.
  4. Pour dried anchovy-kombu broth into a stew pot, add the prepared seasoning paste, and bring to a boil.
  5. Once boiling, add the skewered fish cakes and rice cakes along with the sliced green onion, and simmer gently until the sauce is well absorbed.
  1. Chop green onion finely.
  2. Make a seasoning paste using gochujang, doenjang, red pepper powder, and others.
  3. Skewer fish cakes and rice cakes.
  4. Dissolve the seasoning paste in broth and bring to a boil.
  5. Add fish cakes, rice cakes, and green onion, then simmer until done.

  • Adding a small amount of doenjang to the seasoning paste softens the spiciness and adds a deep umami flavor.
  • Simmer over low heat until the broth thickens so the seasoning fully penetrates the fish cake.
