Oh Se-deuk's Thai-style Shrimp Porridge (Khao Tom)

  • 5-6 shrimp
  • 1 bowl of cooked rice
  • 1 tablespoon minced garlic
  • 2 tablespoons cooking oil
  • 1 tablespoon lemon juice or lime juice
  • 1 egg
  • a pinch of salt

Recipe 🍳

  1. In a pot or deep pan, add cooking oil and minced garlic, and stir-fry until golden to make garlic oil.
  2. Once the garlic is fragrant, add the cleaned shrimp and stir-fry together.
  3. When the shrimp start turning red, add the rice and just enough water to cover, and boil.
  4. Simmer for about 10 minutes, stirring occasionally, until the rice grains become soft and the starch thickens the soup slightly.
  5. Separately, boil an egg in water with a little salt for about 7 minutes to make a soft-boiled egg.
  6. Season the porridge with salt, transfer to a bowl, top with the soft-boiled egg cut in half, and finish with a drizzle of lemon or lime juice.
  1. Sauté cooking oil and minced garlic in a pan until fragrant, then add the shrimp and stir-fry.
  2. Add rice and water, and simmer for about 10 minutes until the rice is tender.
  3. Season with salt, then serve with a soft-boiled egg and a squeeze of lemon juice.

  • When boiling eggs, adding plenty of salt to the water makes the shells much easier to peel.
