Oh Se-deuk's Thai-style Shrimp Porridge (Khao Tom)

- 5-6 shrimp
- 1 bowl of cooked rice
- 1 tablespoon minced garlic
- 2 tablespoons cooking oil
- 1 tablespoon lemon juice or lime juice
- 1 egg
- a pinch of salt
Recipe 🍳
- In a pot or deep pan, add cooking oil and minced garlic, and stir-fry until golden to make garlic oil.
- Once the garlic is fragrant, add the cleaned shrimp and stir-fry together.
- When the shrimp start turning red, add the rice and just enough water to cover, and boil.
- Simmer for about 10 minutes, stirring occasionally, until the rice grains become soft and the starch thickens the soup slightly.
- Separately, boil an egg in water with a little salt for about 7 minutes to make a soft-boiled egg.
- Season the porridge with salt, transfer to a bowl, top with the soft-boiled egg cut in half, and finish with a drizzle of lemon or lime juice.
- Sauté cooking oil and minced garlic in a pan until fragrant, then add the shrimp and stir-fry.
- Add rice and water, and simmer for about 10 minutes until the rice is tender.
- Season with salt, then serve with a soft-boiled egg and a squeeze of lemon juice.
Cooking tips 💡
- When boiling eggs, adding plenty of salt to the water makes the shells much easier to peel.
- While simmering the rice, stir occasionally with a spatula to prevent the bottom from sticking.
- If you have cilantro, add it as a garnish at the end for an extra authentic touch that enhances the flavor.
