Recipe 🍳
- Heat cooking oil in a pan, crack in 2 eggs, and scramble roughly with chopsticks before setting aside separately.
- Add a little more oil to the pan, then add ground pork and minced garlic. Sauté until the pork is fully cooked.
- Once the pork is nicely browned, add 0.5 tablespoon of sugar and continue sautéing until the sugar dissolves and the pork surface turns golden, achieving caramelization for enhanced umami.
- Add 1 tablespoon of anchovy sauce and stir-fry thoroughly with the pork, letting the oil heat up to eliminate any fishy odor while infusing deep flavor into the meat.
- Add 1 bowl of rice and a handful of scallions cut to about two finger-widths, mixing well.
- For final seasoning, add 0.5 tablespoon of oyster sauce and stir-fry vigorously until the scallions just begin to wilt and the seasonings evenly coat the rice.
- Finally, mix in the previously set-aside scrambled eggs and lightly toss once more.
- Press the fried rice firmly into a bowl, invert it onto a plate to shape, then sprinkle with black pepper and toasted sesame seeds to finish.
