Lim Sung-geun's Emperor Gojong's Plum Cold Noodles

Ingredients needed 🛒2 servings
- buckwheat noodles 2 servings
- plum 1 piece
- water 1L
- onion 1/2 piece
- green onion 1 stalk
- peppercorns 3 tablespoons
- soy sauce 1/2 cup (100ml)
- dongchimi broth 2 cups
- cucumber 1/2 piece
- boiled egg 1 piece
- vinegar a little
Recipe 🍳
- In a pot, combine 1L water, 1/2 onion, 1 green onion, 3 tablespoons peppercorns, and 100ml soy sauce. Simmer for 30 minutes to extract the broth.
- Strain the broth through a sieve to remove vegetable solids, then cool it completely.
- Mix the cooled beef broth with chilled dongchimi broth and refrigerate or freeze until very cold.
- Remove seeds from the cucumber, slice thinly and lengthwise, lightly salt, let sit briefly, then squeeze out excess moisture for garnish.
- Boil buckwheat noodles until soft, then rinse quickly under cold water. Finally, rinse in vinegar water to firm up the noodles.
- Peel the plum and break it apart using a spoon as traditionally done, or slice thinly.
- Arrange boiled buckwheat noodles in a bowl, pour the cold broth over them, cover generously with plum slices, and top with cucumber and boiled egg.
- Simmer water, onion, green onion, peppercorns, and soy sauce for 30 minutes to make beef broth; strain and cool.
- Mix cooled beef broth with dongchimi broth and chill thoroughly.
- Cook buckwheat noodles, rinse under cold water, then briefly soak in vinegar water to firm up the texture.
- Break plum into pieces with a spoon and prepare salted cucumber and boiled egg garnishes.
- Place noodles and broth in a bowl, then generously top with plum and garnishes.

- Adding peppercorns while boiling the broth helps eliminate greasiness and adds a subtle, refreshing umami flavor.
- After rinsing the noodles, adding a few drops of vinegar removes the characteristic buckwheat odor and makes the noodles much firmer and chewier.
- Breaking the plum with a spoon as Emperor Gojong did creates irregular fragments that blend smoothly with the cold noodle broth.
