Recipe

Use the green parts of the green onion as is, and split the thick white part in half lengthwise. Lay them evenly on the bottom of the air fryer.
On the prepared hairtail, make a long incision about 6–7mm deep along the edge where the dorsal bones are, so that the bones will be easy to remove after cooking.
Lightly score both sides of the hairtail at 3–4cm intervals.
Spread 1 tablespoon of mirin evenly over the surface of the hairtail and pat it in with your hands.
Season the hairtail by sprinkling a little sea salt on both sides and inside where the guts were.
Place the hairtail pieces on the air fryer basket lined with green onions, making sure they are not overlapping.
Cook in a preheated air fryer at 200°C (400°F) for 18 minutes.
Flip the hairtail over and cook at 200°C for another 10 minutes until the outside is crispy and the inside is moist.

Line the air fryer basket with green onions, and score the cleaned hairtail.
Coat the hairtail with mirin, then season both sides and inside with sea salt.
Cook in the air fryer at 200°C for 18 minutes on one side, then flip and cook for 10 more minutes.

Cooking tips

Making a long incision along the back edge of the hairtail helps the small bones pull away cleanly when you remove the flesh after grilling.
Avoid using vinegar to remove fishiness; it can dull the natural flavor of the hairtail. Instead, use soju or mirin for better results.
The green onions on the bottom prevent the fish from sticking, supply moisture, and add aroma, keeping the fish succulent.
