- salt 3 tablespoons
- vegetable oil 1 tablespoon
- minced garlic 1 tablespoon
- tuna sauce 1 tablespoon
- red pepper powder 1 tablespoon
- toasted sesame oil 1 tablespoon

Recipe 🍳
- Trim the thick ends of the cucumber and gently scrape off the ridges on the outer skin.
- Cut the cucumber lengthwise in half, then use a spoon to carefully remove the watery seed section.
- Slice the cucumber at a slightly thick angle to preserve its chewy texture.
- Mix the sliced cucumber with 3 tablespoons of salt and let it sit for about 5 minutes.
- Rinse the salted cucumber briefly under cold water to reduce saltiness, then squeeze out as much moisture as possible by hand.
- Heat a pan and add 1 tablespoon of vegetable oil, then sauté 1 tablespoon of minced garlic until fragrant.
- Add the squeezed cucumber, 1 tablespoon of tuna sauce, and 1 tablespoon of red pepper powder, stirring well to evenly distribute the seasoning.
- Finally, add 1 tablespoon of toasted sesame oil and chopped red chili pepper, stir lightly one more time, and finish.
- Remove the seeds from the cucumber, slice it thickly, salt it for 5 minutes, then squeeze out all moisture.
- Heat vegetable oil in a pan and sauté garlic until fragrant, then add the salted cucumber and stir-fry together.
- Add tuna sauce, red pepper powder, toasted sesame oil, and chopped red chili pepper in order, stir lightly to finish.
Cooking tips 💡
- Be sure to thoroughly remove the seeds to minimize moisture and properly achieve the crisp, pickled-cucumber-like texture.
- After strong salting, rinse briefly under water to avoid excessive saltiness and achieve balanced flavor.
- For best results, serve chilled after refrigerating—this enhances the crunch and significantly improves taste.
