Ingredients needed 🛒2 servings
- beef (thinly sliced) 150g
- burdock 1 large
- carrot a little
- vegetable oil 1 tablespoon
- kombu stock (or water) 1 cup
- soy sauce 3 tablespoons
- mirin 2 tablespoons
- clear rice wine 2 tablespoons
- sugar 1.5 tablespoons
- toasted sesame seeds a little
Recipe 🍳
- Peel the burdock using the back of a knife, then slice it thinly like pencil shavings. Cut the carrot into thin strips.
- Heat a pan and add a small amount of vegetable oil. Sauté the thinly sliced beef first.
- Once the beef is partially cooked, add the sliced burdock and carrot, and stir-fry together to enhance the aroma.
- Add kombu stock, soy sauce, mirin, clear rice wine, and sugar in the specified amounts, and mix well.
- Simmer over medium heat until the sauce thickens slightly and the burdock absorbs the seasoning fully.
- Turn off the heat when most of the liquid has evaporated, transfer to a serving bowl, and sprinkle with toasted sesame seeds.
- Thinly slice burdock and carrot and prepare.
- Heat oil in a pan and sauté beef, burdock, and carrot in order.
- Add stock and seasonings, then simmer until the sauce thickens, and finish with sesame seeds.

- If not cooking immediately after slicing, soak the burdock in water with a splash of vinegar to easily prevent browning.
- Sautéing the ingredients in oil before cooking enhances the burdock’s natural aroma and maintains its crisp texture.
