Ingredients needed 🛒2 servings
- beef (thinly sliced) 200g
- scallions 2 bunches
- garlic 3 cloves
- ginger 1/2 piece
- starch powder 1 small spoon
- egg white 1 large spoon
- vegetable oil 3~4 large spoons
- soy sauce 1 large spoon
- oyster sauce 1 large spoon
- sesame oil a little
Recipe 🍳
- Slice garlic and ginger thinly.
- Cut scallions in half lengthwise, then slice into large pieces about 4~5cm long.
- Place thinly sliced beef in a bowl, add starch powder and egg white, then mix gently to coat evenly.
- Heat vegetable oil generously—about 3~4 large spoons—in a pan and preheat thoroughly.
- Add the marinated beef one piece at a time, lightly stir-frying until the surface turns soft and slightly browned.
- When the red color of the beef begins to fade, add the sliced garlic and ginger, letting their aroma infuse into the beef fat.
- Add soy sauce and oyster sauce, then stir-fry together to balance the overall seasoning.
- Add the sliced scallions all at once, quickly tossing over high heat so they don’t separate from the meat and sauce.
- Turn off the heat when the scallions have absorbed some oil and softened slightly, then drizzle sesame oil around and gently mix to finish.
- Slice garlic and ginger thinly; cut scallions into large 4~5cm pieces.
- Mix starch powder and egg white into the beef for coating, then stir-fry in a heated pan with oil.
- Add garlic, ginger, soy sauce, oyster sauce, then stir in scallions and finish with sesame oil over high heat.
Cooking tips 💡
- Massaging the beef with starch and egg white helps retain moisture and juices, making it remarkably tender.
- Scallions shrink significantly when cooked and become sweeter, so use more than you think necessary.
- You can substitute beef with pork slices or shrimp, using the same method for an equally delicious scallion stir-fry.
